Symbols with more than one name
Unicode's own notes record the everyday names: # (U+0023 NUMBER SIGN) is also called hashtag, hash and octothorpe; | (U+007C VERTICAL LINE) is the vertical bar or pipe; ` (U+0060 GRAVE ACCENT) is the backtick. The table lists them all.

Apple shows its modifier keys with these symbols in menus and shortcuts: Command ⌘, Shift ⇧, Option ⌥, Control ⌃ and Caps Lock ⇪.
Typing the symbols that aren't on the keyboard
On Windows, hold Alt and type a code on the numeric keypad (see the full list of Alt codes), or press Windows + . and open the Symbols tab. On a Mac, open the Character Viewer with Fn/Globe + E.

~ is TILDE (U+007E).
What is the | symbol called?
| is VERTICAL LINE in Unicode, also called vertical bar or pipe. On US keyboards it's Shift + the backslash key.
What is the ^ symbol called?
^ is CIRCUMFLEX ACCENT (U+005E). Unicode's notes say it's used in plain-text math for exponents, as in 2^3.
What is the Command key symbol on a Mac?
⌘ (PLACE OF INTEREST SIGN, U+2318). Apple uses it for Command.
